Spicy Moroccan Chicken and Khamiri Roti.

A very simple, easy to cook and delicious chicken recipe. Although it is recommended to be eaten with Khobz, Moroccan white bread but for us in India it is best enjoyed with normal roti, nan or khamiri roti.

Ingredients:

  • Chicken- 4 thighs

  • Cinnamon- 1inch

  • Black Pepper corns- 8-10

  • salt to taste

  • Cumin- 1tsp

  • coriander seeds- 2tbsp

  • Dried Red Chillies-3-4

  • Haldi- 1tsp

  • Onions- 2big

  • Tomatoes- 2big pureed (about one cup)

  • garlic paste- 1tbsp

  • crushed garlic- 4-5pods

  • olive oil/any other refined oil- 4tbsp

  • vinegar- 2tsp

  • dried apricots- 8-10


Recipe:

  1. Dry roast all spices lightly except haldi and salt and coarsely grind it.

  2. Take chicken in a mixing bowl. Add the masala, haldi and salt. Also add vinegar, 2 tbsp of oil and garlic paste and mix well,

  3. In a pan put remaining oil and fry chicken on high flame.

  4. When done, add sliced onion and crushed garlic. continue frying on high flame.

  5. After 2 minutes add tomato puree.

  6. Remember to continue frying on high flame for another 2 minutes.

  7. Reduce flame to medium, add apricots and cook for another 5 minutes.

  8. Now put out the flame and transfer the contents to a baking dish.

  9. Now bake for 15 minutes at 180 degrees.

  10. Lo behold!! its ready to be enjoyed🙂
