Neembu ka Achaar | Lemon Pickle

This is an unconventional lime pickle preserved only in sugar, salt, and lemon juice. Sweet and sour and oozing with flavourful juice, this is a summer classic but can be preserved and eaten for decades!
Preparation Time: 2 hours
Preservation Time: 2 weeks
Storage Instructions: Room temperature, away from heat and direct sunlight
Ingredients:
Lemon one kg.
Salt, sugar and red chilly powder
Recipe:
Take one kg nice juicy lemons with thin skin.
Wash and dry the lemons and divide them into half.
Cut half the lemons into roundels and keep them in a clean and dry jar.
Now, add the juice of the remaining lemons. Add salt and powdered red chillies also as per taste.
Now keep it in sunlight for one week. When the lemons are done add powdered sugar and continue to keep in sunlight.
Make sure to shake the jar twice daily. Enjoy the tangy sweety taste of lemon pickle!
